What is a Pork Butt?
Contrary to what the name implies, pork butts do not originate from the pig’s rear end. A pork butt is a cut taken off of the pork shoulder and tends to have a healthy amount of fat. The fat cap on top of the pork butt produces our melt-in-your-mouth barbeque. The pork butt is thick enough to handle our low and slow smoking process without drying out. Using this method on a lean or thinner piece of pork could result in shoe leather rather than delicious barbeque. Red Hot & Blue has perfected our smoking process to gain the most flavor possible from the pork butt.
The Secrets in the Rub
You cannot put a naked Boston butt into the smoker and expect a great-tasting barbeque. The cut of meat should be prepared using a rub before entering the smoker. The rub penetrates the meat well before it’s smoked and infuses it with tremendous flavor. Our secret Red Hot & Blue rub creates a one-of-a-kind barbeque unlike anything you have eaten before.
