Is Pork Meat Graded?
Beef is graded into three categories according to the USDA, choice, select, and prime. Prime beef is the best of the best and has a large amount of marbling. Prime beef is primarily produced from young, well-fed cattle. Prime beef is followed by choice beef. Choice has less marbling than prime, but it is still a great-tasting cut of beef. The lowest quality of beef is select, with the least amount of marbling and less overall flavor than prime or choice. Red Hot & Blue uses only the highest quality beef in our juicy, tender burgers.
Unlike beef, pork does not follow the same USDA grading scale. Pork is sold in various cuts, such as pork shoulder, pork butt, pork loin, ribs, etc. Each amount of meat will have its own “ideal” characteristics that we look for. The best way to tell high-quality pork apart from low quality is through appearance.
Red Hot & Blue takes pride in using the highest quality and freshest pork in our barbeque. It is part of what makes our barbeque so irresistible! Pork that does not have the ideal marbling or color does not make it into our final batch of barbeque.
